Dish: Pasta with Pecorino cheese

Difficulty * (one star = easy)

A delicious yet uncomplicated dish now that serious teaching underway is taking up all our time.

Prep Time:  max 20 minutes        Quantities given for 2 people Kcals: 456/portion

Ingredients:

150g pasta (any long pasta), 100g cheese (any mature cheese), a clove of garlic (or half a teaspoon of dried), a handful of fresh parsley (or a teaspoon of dried)

Here we go….

1) Fill a medium pan three quarters full of water with a teaspoon of sea salt and bring it to the boil. Only then pop in the pasta. Stir so it doesn’t all stick together.

2) While the pasta is cooking, chop up some fresh parsley and a clove of garlic if you like. Alternatively use dried equivalents (but the result will be different!). Grate your mature cheese into a mixing bowl and tip the chopped parsley and garlic in too. Then stir in a spoonful of hot water from the boiling pasta to make it more creamy.

3) When the pasta is cooked (about 8 minutes) , drain it and tip it into the mixing bowl and stir it all up together.

4) Serve! Absolutely delicous! Any rosé wine goes perfectly with this dish.
